El 5to Aniversario: Tinto x Santanera

Five years of Santanera calls for a celebration to match! Join us as we go back to our roots and celebrate Colombian flavours, art, and music. For one night only, founding Chef Germán Rincón returns from Tinto, Melbourne to reunite with Chef Andrés Becerra.

The night starts with a festive sharing menu, and immersive Alma Latina performances will unfold across the dining floors between courses, leading to a grand finale on the rooftop and a party late into the night.

  • It is Santanera’s fifth anniversary celebration on 19 November 2026. The night brings a sharing dinner cooked by founding chefs Andrés Becerra and Germán Rincón, Latin dance performances through dinner, and a rooftop party.

  • It takes place on 19 November 2026 at Santanera, Jl. Tanah Barak No. 55-57, Canggu, Bali. Dinner reservations are available throughout the evening. The rooftop opens from 9 PM, with celebrations continuing until late.

  • The sharing set menu is IDR 950,000++ per person.

  • Founding chefs Andrés Becerra and Germán Rincón cook a menu made for sharing. Germán returns from his Spanish restaurant, Tinto, in Melbourne. Dishes include Sher wagyu cecina with smoked pineapple, Normandy scallop tostón, a grilled chicken wing stuffed with xistorra, red snapper and navajas ceviche, tallarines rojos with habanero bisque, and fresas con crema for dessert.

  • Throughout dinner, four Alma Latina dancers move through both dining floors with dance, theatrical appearances and spontaneous interactions. Floral installations inspired by Colombia’s Feria de las Flores decorate the restaurant, inside and out.

  • From 9 PM, guests head upstairs for an anniversary party and a choreographed finale to Celia Cruz’s “Quimbara.” Freestyle dancing invites everyone in before the DJ takes over. Celebrations continue until late at the rooftop bar.

Its menu blends Latin American flavours, European technique and local ingredients, with woodfire cooking, fermentation and dishes designed to share.
