ORIGIN OF SANTANERA

Standing three stories high amidst the trendy shops and rice fields of Canggu in Bali, Santanera is a distinctive Bali restaurant known for its story of crossed cultures and cuisines; a conversation of Latin American flavours, Mediterranean influences and fine local ingredients. As a refined fine dining experience in Bali, Santanera brings together the best of two worlds: bold and refined, familiar yet surprising.

The restaurant was born from the collaborative efforts of friends with a shared vision – including two skilled Colombian chefs Andres Becerra and German Rincon

Meet the Team

  • Andres Becerra

    Co-Founder & Executive Chef

Meet Chef Andres. Colombian-born, he has extensive international culinary experience, including previously Movida in Australia, Relae in Denmark, and Els Casals in Spain.

At Santanera, he creates a story of crossed cultures and cuisines; a conversation of Latin American flavours, European influences and fine local ingredients brought to life through a truly memorable casual fine dining Bali experience.

  • Gabriel Steinberger

    Co-Founder & Managing Director

Meet Gabriel, part of the leadership team at Santanera. With over 15 years of experience in hospitality, he has been managing restaurants since his early 20s, building a strong international background across both France and Australia.

He brings a deep passion for food, wine, and the art of hospitality into everything he does at Santanera. For Gabriel, it’s not just about service, but about creating a thoughtful and memorable experience where detail, energy, and genuine care come together.

  • Sydney Millo

    Operations Manager & Sommelier

Meet Sydney, who’s been growing with the restaurant driven by a clear focus: to evolve with the team and help take Santanera further while supporting collective success.

Before Bali, Sydney immersed himself in the world of wine across multiple disciplines, including winemaking, sales, sommelier, and wine tourism in France and abroad. This diverse background now shapes his approach to service, hospitality, and excellence.

For Sydney, the most meaningful part of Santanera isn’t a single moment, but the everyday energy shared with the team that makes the experience dynamic, rewarding, and constantly evolving.

  • Windy Prasanti

    Marketing & PR

Meet Windy, PR & Marketing Specialist at Santanera. Her story with Santanera began not with an interview, but as a guest, three years ago, over a Picante 38 and a salmon roe tartelette that disappeared far too quickly. Today, she helps shape the voice and identity behind the restaurant.

Working closely with management and the kitchen team, Windy connects story, culture, and cuisine to create a brand experience that feels both elevated and alive. She believes hospitality should never feel overly polished or predictable, but honest, full of personality, and bold in all the right ways.
